Easy and Delicious Home Cooked Meals for Busy Moms

3. In the same skillet, add mixed vegetables and garlic. Stir-fry until vegetables are tender-crisp, about 5 minutes.

4. Return tofu to the skillet and add soy sauce and hoisin sauce. Stir well to combine and heat through.

5. Caprese Quinoa Salad:


- 1 cup quinoa, rinsed

- 2 cups cherry tomatoes, halved

- 1 cup fresh mozzarella balls, halved

- 1/4 cup fresh basil leaves, chopped

- 2 tbsp balsamic vinegar

- 2 tbsp olive oil

- Salt and pepper to taste


1. Cook quinoa according to package instructions. Once cooked, fluff with a fork and let cool slightly.

2. In a large bowl, combine cooked quinoa, cherry tomatoes, mozzarella balls, and basil.

- 6 large flour tortillas
